Almost Fat Free fruit Loaf.
Ingredients.
5 oz mixed dried fruit,
half a cup of strong hot tea,
4 ounces of brown sugar,
7 oz of self raising flour,
1 oz of butter,
1 egg
Soak the 5oz of mixed fruit in the half a cup of strong tea overnight and stir in the 4 oz of brown sugar.
Pre-heat the oven to 180 degrees C, 350 F Gas mark 4.
Grease a 1 lb loaf tin and add 7 oz of self raising flour, rub in the 1 oz of butter and add the egg. Then add the dried fruit and tea mixture. The whole mixture goes into the greased tin and is baked for an hour and then test it to make sure it's cooked. It should be delicious.
Low fat spicy chicken dish.
Chicken pieces (chopped roughly)
A red pepper, green pepper and onion.
Pinch of chilli and seasoning (fajita, masala, tikka or barbecue)
A large can of tomatoes and a stock cube.
Coat the chicken with the seasoning.
Fry the chicken in a little oil adding the chopped peppers and chopped onion.
Add a pinch of chilli powder, the chopped canned tomatoes and the crumbled stock cube.
Simmer slowly until the chicken is well cooked.
Serve with rice chips or pitta bread; delicious...
